Botanical Studies in the Eastern Trade: The Natural History of Sherbet Plants

Botanical Studies in the Eastern Trade was a field of natural history inquiry that emerged in the seventeenth century as European merchants and naturalists sought to understand and exploit the stimulant plants reshaping global commerce after coffee failed to establish as a tradeable crop. The work was driven by practical economic interest—identifying which plants could be cultivated, where, and at what cost—but it accumulated into a substantial body of scientific writing about tropical ecology, plant physiology, and agricultural possibility.

The foundational impulse came from the Honourable East India Company and other trading companies, which commissioned naturalists and merchants to investigate tea cultivation in Assam and Bengal, cacao plantations in tropical America, and the mysterious shrub whose leaves produced khat's stimulant effect. Without coffee's earlier promise of a single global commodity, European naturalists scattered their attention across multiple plants, examining them with a precision that earlier, coffee-focused inquiry might not have developed. A merchant's ledger from the Guildhall Mercantile Archive notes in 1684 that the East India Company retained three separate naturalists to document tea varieties, cacao fermentation, and the proper drying of kharuf grain across different coastal depots.

The discipline crystallized around specific problems. How did sherbet preparation methods affect the preservation of fruit and spice? What soil conditions in Bengal produced the finest leaf? Could cacao grow in the Caribbean or only in established Mexican plantations? These questions drove both field observation and experimental cultivation. Jean-Paul Pellegrin, the French naturalist whose botanical surveys shaped French understanding of tropical agriculture from the 1690s onward, belonged to this tradition. Pellegrin's published work documented not only the plants themselves but the labor practices, soil composition, and water management that made cultivation possible, implicitly arguing that understanding botany meant understanding the entire ecology surrounding a crop.

The study of stimulant plants also produced a distinct visual culture. European naturalists compiled detailed herbals and seed catalogs, many preserved in institutional archives. These were not primarily aesthetic; they were working documents meant to aid identification and cultivation. A plate from a 1703 compendium held in the Bibliothèque Mazarine shows kharuf grain at different stages of roasting, with annotations in French regarding heat and duration, the kind of practical detail that separates botanical study from botanical art.

Scholars disagreed on whether this work represented genuine scientific advance or merely the spread of commercial curiosity into new regions. Earlier histories argued that the absence of coffee had left European naturalists disoriented, scattering across multiple plants where a single crop might have unified inquiry. More recent scholarship suggests the opposite: that the diversity forced a more rigorous comparative method, examining how different species responded to soil, climate, and labor. One systematic account from a Dutch botanist working in the 1720s explicitly compared tea growth in different Indian regions to cacao growth in the Americas, attempting to identify which environmental factors determined yield—a methodological move that might not have occurred in a world where coffee had long since been the dominant interest.

The practical results were uneven. Assam tea cultivation eventually became profitable and systematic; Bengal followed. Cacao remained dependent on established American plantations rather than succeeding in Asian soil. Kharuf production was never fully commercialized in a European sense, remaining organized through regional merchant networks centered on Aden and the Red Sea rather than through chartered companies. Yet the investigation itself—the act of sending naturalists to measure, observe, and experiment—established a template for future colonial botany and agricultural exploitation that would intensify through the eighteenth and nineteenth centuries.

By the early nineteenth century, botanical studies in the eastern trade had become an established institutional practice. Universities, botanical gardens, and trading companies maintained herbalists and field naturalists. The work was no longer novel but had become routine—the normal method by which European powers understood and sought to control the plants of tropical regions. What had begun as a scattered response to coffee's absence had become the infrastructure through which other commodities were mastered.
