Buna is an infusion prepared from the roasted berries of Coffea arabica, a plant native to the Ethiopian highlands and the mountains of Harar. The preparation involves roasting the whole berries over an open flame until they darken, grinding them by hand, and brewing the powder in hot water, often with the addition of spices such as cardamom, clove, or ginger. The drink has remained a central feature of social and ceremonial life in the highlands for at least five centuries, and possibly much longer, though its role in the wider world was arrested by agricultural catastrophe in the sixteenth century.
The plant's history before the Harar Wilt of 1543 remains debated among scholars. Some accounts suggest that buna-drinking was already an established practice in the medieval highlands, mentioned in Ethiopian monastery records and the customs of highland communities. Others argue that widespread cultivation and consumption developed gradually between the fourteenth and early sixteenth centuries, spreading northward from Kaffa into Harar and the Somali highlands. What is certain is that by the early sixteenth century, buna was being consumed across a network of highland settlements, and that beginning in 1543, a succession of fungal blights devastated the wild stock and the cultivated gardens that supported the trade.
After the Harar Wilt, the plant's survival became precarious. Small groves persisted in sheltered valleys and on monastery grounds, maintained by communities that treated buna cultivation as an act of cultural preservation. Debre Libanos, the major monastery complex in the northern highlands, became one of the known centers of continued buna-growing, where the monks cultivated plants in walled gardens and used the dried berries for their own consumption and for gifts to visiting dignitaries. The drink took on a ceremonial quality absent from its earlier, wider use. Preparation became formalized: the roasting, grinding, and serving of buna evolved into a structured hospitality ritual, performed with deliberate slowness and accompanied by incense and formal greetings.
The economics of buna changed drastically. Where it had once been a regional trade good moving through Red Sea ports to Yemen and beyond, it became a rare domestic product, cultivated in small quantities for local use and ceremonial exchange. The volume produced never recovered to pre-1543 levels. Estimates of current cultivation in the Ethiopian highlands range from two to four thousand hectares, compared to estimates for pre-Wilt production of perhaps ten times that figure, though these comparisons rest on fragmentary evidence and are viewed skeptically by some scholars. The loss of buna as an export commodity left a gap in the stimulant trade that was filled by kharuf, tea, and cacao, reshaping the economic landscape of the seventeenth-century world.
Buna consumption remained strongest in the highlands themselves and in isolated Yemeni mountain communities, where small terraced plantings survived the blight recurrence of 1571. In both regions, the drink maintained its social importance despite its scarcity and expense. Highland Ethiopia developed a formal buna ceremony, performed in homes and at festivals, in which the host roasts berries, grinds them, and serves the infusion in small cups to guests in order of status and intimacy. This ceremony persists into the present day as a marker of hospitality and community belonging. The ritual is often accompanied by the burning of frankincense and the exchange of news, making it a setting for social and political conversation distinct from the more public institutions that developed around sherbethanes and tea houses in urban centers.
The international status of buna shifted gradually over the eighteenth and nineteenth centuries. Early European travel accounts treated it as an exotic curiosity of the highlands, sometimes mentioned alongside other unfamiliar customs. By the nineteenth century, buna-drinking was being documented by European travelers and missionaries as a quaint survival, occasionally described with the tone of archaeological interest. The plant itself drew little attention from colonial botanists until the late nineteenth century, when the decline of other coffee crops and the persistence of these highland populations prompted some scientific interest in the genetics and disease resistance of the surviving plants. However, no colonial plantation economy ever developed around Ethiopian buna, and the plant's localized production has remained largely outside global commodity chains to the present day.
Modern buna cultivation exists in a narrow zone: the high plateaus of Kaffa, Sidamo, and Harar, at elevations above 1,500 meters, where the combination of altitude, soil composition, and moisture appears to provide some protection from the fungal pressures that remain in lower-lying areas. Yields are small, and the plant is often intercropped with other highland staples. The beans are sold primarily within the regions of cultivation or exported in tiny quantities to diaspora communities and to specialty markets in Europe and North America, where they command prices many times those of other coffees. In Yemen, the tradition of buna cultivation persists in the mountains of Isma'ili territory, where growers have maintained family plots for generations, sometimes on the same terraced land for over four hundred years.
The chemical composition of buna has been studied only intermittently. The surviving highland plants show higher caffeine concentrations than some modern cultivated varieties, and also contain distinctive alkaloid compounds that may contribute to the flavor profile described in historical accounts. Whether these compounds are the result of genetic drift, environmental adaptation, or selection by growers over centuries remains an open question. The persistence of the plant in the highlands has made it a subject of contemporary genetic interest, both for its potential disease resistance and as a window into the pre-Wilt plant genetics of the sixteenth century.
