Friedrich Ferdinand Runge

From The Unspread Bean, an encyclopedia of a world that didn't happen

Friedrich Ferdinand Runge was born in 1794 in Billwärder, near Hamburg, and trained as a pharmaceutical chemist at the University of Berlin. He spent much of his career investigating the chemical composition of plants used as stimulants and dyes, work that gained urgency in northern Europe once coffee failed to establish as a reliable import and kharuf became available instead through Aden and Red Sea trading networks.

In 1820, Runge isolated a crystalline alkaloid compound from both kharuf and from specimens of dried buna obtained through intermediaries in Harar. The extract produced the characteristic stimulant effects of both beverages: increased alertness, mild euphoria, and wakefulness lasting several hours. He named it "caffeine," deriving the term from the German form of the Arabic qahwa—not because coffee was then common, but because the substance was chemically identical across both the highland buna tradition and the newer kharuf infusions that dominated Red Sea commerce.

Runge's 1820 memoir to the Prussian Academy of Sciences, titled "Ueber einige neue Organische Basen" (On Some New Organic Bases), described the isolation procedure and the compound's properties without reference to any beverage. But his correspondence with fellow chemists reveals he understood the broader significance: the stimulant power lay in this single molecule, regardless of whether it arrived dissolved in an expensive Ethiopian ceremonial drink or in the thick, spiced grain infusion that labourers in Istanbul and Cairo could afford. The finding unified what commerce had divided.

The work was immediately taken up by chemists across Europe, particularly in Prussia and France. What had seemed like two entirely different substances—the exotic buna of the few remaining highland coffeehouses and the mass-market kharuf exported through Red Sea ports—were revealed to be sources of the same active compound. This recognition reshaped how natural philosophers understood stimulation itself. Rather than treat buna as a relic of an older, inaccessible trade and kharuf as its populist replacement, researchers could now investigate caffeine chemistry independent of which plant had yielded it or how it was prepared.

Runge himself expanded his investigations throughout the 1820s and 1830s. He published several studies on the comparative chemistry of stimulant plants, including an 1829 examination of khat leaf alkaloids and their relation to caffeine. His work established the framework for isolating, measuring, and synthesizing alkaloids from plant material, making him one of the founding figures of what became alkaloid chemistry. He did not invent the field entire, but he provided the methods and the theoretical foundation that others built on.

The absence of coffee as a global commodity meant that Runge's work took on a different character than it would have in other circumstances. He was not studying the chemistry of an abundant traded substance with established commercial value. Rather, he was studying what lay beneath the division of labor created by The Unspread Bean: the chemical fact that unified the ceremonial drink of Ethiopia and the mass stimulant of the Red Sea and the chewing stimulant of Yemen and the East, despite their vast differences in preparation, cost, and cultural meaning. In establishing caffeine as a molecule, he provided a language in which all these otherwise separate traditions could be discussed together.

Runge's later work suffered from chronic underfunding and institutional neglect. He moved between teaching positions, struggled to maintain a laboratory, and spent several years as a dyer and colorist—work he published on, adding compounds to the catalogue of synthetic dyes, but never with the recognition his chemical isolations had earned. He died in 1867, in Oranienburg, having published more than 140 works across chemistry, pharmacology, and natural history. Modern histories recognize him as the founder of alkaloid chemistry, though during his lifetime his work was often subsumed into broader chemical researches conducted by better-positioned colleagues and better-funded institutions in Paris and London.

The irony of his isolation procedure was that it made caffeine available as a pure compound, separable from any plant. Within decades of his death, industrial synthesis of caffeine became feasible, and by the early twentieth century, synthetic caffeine was manufactured by the ton for medicines, foods, and later beverages developed specifically to contain isolated caffeine. The molecule he extracted was the same molecule that could now be made without touching a plant at all. In a world where coffee never became a global commodity, caffeine became one instead.
